Javier Acedo, javier-trufero on Twitter, is an artisan truffle farmer. His is an all-encompassing company dedicated to truffles. And everything means everything: starting with the breeding, training and sale of Lagotto Romagnolo dogs, which are, according to him, the best genetically prepared for locating truffles.

We offer consultancy to carry out plantations on farms and manage their maintenance and exploitation. And finally reaching the production of its own truffles and the purchase and distribution of others for a select group of Spanish restaurants interested in having not only the product in their kitchens, but also its expert advice. Specific training on truffles

At Trufas Alonso we are much more than a marketer. We offer specific training on truffles in hotel and catering schools, and we teach a course on Taxonomy, Classification and Differentiation of the Tuber genus (truffles) Conservation, Cleaning and Use.

We have taught this course at the Basque Culinary Center, Le Cordon Bleu Madrid and Le Cordon Bleu Mexico.
